About Carnival Mardi Gras Mardi Gras, launched in 2021, is a groundbreaking Excel-class ship that redefines the cruising experience with its innovative features and diverse amenities. With a gross tonnage of 180,800 and a guest capacity ranging from 5,282 to 6,338 passengers, it offers ample space for relaxation and entertainment. New Carnival Menu Rollout Schedule. The new dining room menus were released on the Carnival Dream in June and Carnival Conquest in July of 2023. The Carnival Menu rollout continued fleetwide around the dates listed below: Carnival Radiance: August 18, 2023. Mardi Gras: August 19, 2023. Carnival Breeze: September 2, 2023. The Fortune Teller Bar is beautifully themed with some truly unique and out-of-this-world cocktails. It’s available exclusively on the Carnival Mardi Gras in the French Quarter zone. Cucina Del Capitano on the Mardi Gras works differently than some of Carnival's older ships as on the Mardi Gras this is considered an alternative to the main dining room. Guests on Mardi Gras can dine one complimentary time in Cucina Del Capitano and then each additional visit costs extra ($8 per person at the time of writing).
