Launched in 2021, Mardi Gras is an innovative Excel-class ship featuring six themed zones and exciting attractions like BOLT, the first roller coaster at sea. Emeril’s Bistro 1396 is a specialty restaurant available only on Carnival Mardi Gras ship. It’s popular for its Cajun-Creole food.
