About Carnival Mardi Gras Mardi Gras, launched in 2021, is a groundbreaking Excel-class ship that redefines the cruising experience with its innovative features and diverse amenities. With a gross tonnage of 180,800 and a guest capacity ranging from 5,282 to 6,338 passengers, it offers ample space for relaxation and entertainment. Street Eats is Carnival’s tribute to this food phenomenon, debuting aboard Mardi Gras ® with three ever-changing open-air stations. The first, Steam Dream, specializes in the steamiest stuff this side of the spa, featuring favorites like bao buns and pot stickers. The kiosks that make up Carnival’s homage to street cuisine are located on Deck 16 of the Mardi Gras cruise ship, and they come to life during lunchtime. The bao buns from Steam Dream, the kebabs from Mad Sizzle, and the loaded cheesesteak fries from Time Fries are all delicious options, and it will be difficult for you to choose just one. Mardi Gras will begin sailing from Port Canaveral later this summer and will offer week long cruises to the Caribbean. The cruise ship is the first of three Excel class ships being added Carnival Cucina Del Capitano on the Mardi Gras works differently than some of Carnival's older ships as on the Mardi Gras this is considered an alternative to the main dining room.
