About Carnival Mardi Gras. Mardi Gras, launched in 2021, is a groundbreaking Excel-class ship that redefines the cruising experience with its innovative features and diverse amenities. With a gross tonnage of 180,800 and a guest capacity ranging from 5,282 to 6,338 passengers, it offers ample space for relaxation and entertainment. PALM RESTAURANT (Main Dining Room) The Palm Restaurant, the ship’s primary dining venue, can be found on Decks 6 and 7, and its name comes from those decks. The upscale but never stuffy setting is complemented by a dinner menu that features multiple courses and is updated daily.
