About Carnival Mardi Gras. Mardi Gras, launched in 2021, is a groundbreaking Excel-class ship that redefines the cruising experience with its innovative features and diverse amenities. With a gross tonnage of 180,800 and a guest capacity ranging from 5,282 to 6,338 passengers, it offers ample space for relaxation and entertainment. The ship is Restaurants on Carnival and Mardi Gras that Are Completely Free. PALM RESTAURANT (Main Dining Room) The Palm Restaurant, the ship’s primary dining venue, can be found on Decks 6 and 7, and its name comes from those decks. The upscale but never stuffy setting is complemented by a dinner menu that features multiple courses and is updated daily. Carnival Cruise Line's new ship, Mardi Gras, is absolutely chock-full of dining venues, many included and some with an up-charge. To help passengers determine what's open for which meal and The ship's architects noted that Mardi Gras requires a different dining flow, as the ship does not work if all guests eat their meals in the main dining room and Lido. Mardi Gras will begin sailing from Port Canaveral later this summer and will offer week long cruises to the Caribbean. ChiBang! is a new restaurant, first featured on Carnival Mardi Gras, serving as a replacement for Ji Ji's asian restaurant found on some other ships in the fleet. ChiBang! is a unique concept restaurant that offers a mix of Mexican and Chinese food. This is not a fusion menu, but instead two distinct menus which allow you to mix and match. A Carnival Mardi Gras first, this restaurant with ties to celebrity chef Emeril Lagasse serves Cajun/Creole favorites in a New Orelans-style atmosphere. Located in the ship’s “French Quarter” zone, the bistro offers jambalaya, BBQ shrimp, fried oysters, gumbo, and muffaletta sandwiches for lunch and dinner. MEET THE CEREMONY. We kick off a new ship’s career with a naming ceremony and ours are one part tradition and a lotta parts fun!
