Symphony of the Seas and Mardi Gras both provide what we expect from a mega ship, endless activities, fun for all ages and a great selection of food, drinks and entertainment. Both Symphony of the Seas and Mardi Gras sail to the beautiful Caribbean, but they visit different destinations, allowing passengers to experience a variety of cultures and attractions. Symphony of the Seas offers four port stops on most 7-day cruises, taking passengers to popular Caribbean destinations such as Cozumel, Roatan, and St. Thomas. I have to disagree with you on design. Royal's ships do a far better job of managing crowds and spreading out activity centers than carnival. Even as loyal fan of royal I'll admit Royal's complimentary options (Outside MDR and buffer) are far behind other cruise lines. Royal still beats carnival in service and activities hands down though. Mardi Gras definitely has the better itinerary, but I would personally pick the Oasis over the Mardi Gras in terms of the ship itself. As a disclaimer, I've only been on one of the Oasis' sister ships, the Symphony of the Seas, and haven't been on the new Carnival ships.
